Cottage Cheese Pancakes (Syrniki)

These classic syrniki are soft on the inside with a lightly golden crust. Made with simple ingredients, they’re perfect for breakfast or a cozy dessert.

Ingredients (Serves 2–3)

  • 400 g cottage cheese (5% fat)
  • 1 egg
  • 1 tbsp all-purpose flour (approx.)
  • 2 tbsp sugar
  • 10 g vanilla sugar
  • 1 pinch of salt

Instructions

  1. Place the cottage cheese and egg into a blender and blend until smooth.
  2. Transfer the mixture to a bowl. Add sugar, vanilla sugar, salt, and flour. Mix gently until combined.
  3. Shape the mixture into small patties.
  4. Heat a lightly oiled pan over medium heat.
  5. Fry the syrniki for 2–3 minutes per side, until golden brown.
  6. Serve warm.

  1. Do not add too much flour - syrniki should stay tender.
  2. If the mixture is too soft, lightly dust the syrniki with flour.
  3. Raisins or berries can be added for extra flavor.
