Homemade Mayonnaise

This homemade mayonnaise is smooth, creamy, and made with simple ingredients. It comes together in just a few minutes and tastes much better than store-bought.

Ingredients (Makes about 250 ml)

  • 1 fresh egg, room temperature
  • 1 tsp mustard
  • 1 tbsp lemon juice or vinegar
  • 200 ml olive oil or sunflower oil
  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Place the egg, mustard, lemon juice (or vinegar), salt, and pepper into a tall blending container.
  2. Pour in the oil.
  3. Insert an immersion blender and place it at the bottom of the container.
  4. Turn on the blender and keep it at the bottom for 10-15 seconds, until the mixture thickens.
  5. Slowly move the blender upward until the mayonnaise is fully emulsified.
  6. Taste and adjust seasoning if needed.

Tips & Variations

  1. All ingredients should be at room temperature.
  2. Sunflower oil gives a more neutral flavor.
  3. Add garlic or herbs for flavored mayonnaise.
