Ingredients (Serves 4)

  • 250 g fettuccine pasta
  • 300 ml cream (15-20%)
  • 30 g butter
  • 100 g Parmesan cheese, grated
  • 2 garlic cloves, minced
  • Fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Reserve 50 ml of pasta water, then drain.
  2. In a large pan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Pour in the cream and bring to a gentle simmer.
  4. Add the grated Parmesan cheese gradually, stirring constantly until melted and smooth.
  5. Season with salt and pepper to taste.
  6. Add the cooked fettuccine to the sauce, tossing to coat evenly. If needed, add a splash of reserved pasta water to reach desired consistency.
  7. Garnish with chopped parsley and serve immediately.

Tips & Variations

  1. Use fresh Parmesan for the best flavor.
  2. Do not boil the cream - keep it at a gentle simmer to prevent curdling.
  3. Add cooked chicken or mushrooms for a heartier dish.
